Creamy Chicken Gnocchi Soup |

It is super cold and windy in SD today (and when I say “super” I mean it is about 60 degrees out)┬áand all I wanted was a bowl of homemade warm soup. And this Creamy Chicken Gnocchi Soup fit the bill.

The combination of cream and gnocchi make this a richer version than your typical chicken noodle soup – almost like chicken and dumplings.

Even though the cold weather is coming to an end here in San Diego I can eat a bowl of hot soup any time of year. Literally…middle of summer…I have no problem throwing together a batch of soup.

And this Spicy Asian Noodle Soup is no exception.

Plus, this soup is so easy to put together. Cut up some veggies, simmer them in beef broth with some spices, and add noodles at the end to finish it up. Easy, right?

It is New Year’s Eve and the year is officially coming to an end. I am beyond excited for all of the fun and adventures that 2016 has in store, but before this year ends I wanted to share with you one of my favorite recipes from 2015…and perhaps, all time ­čÖé

This Healthy Turkey Chili is so easy to make, so delicious and makes a TON so you will have lunches for a whole week when making this.┬áIt is full of lean protein, fresh veggies and lots of hot sauce (or none at all if you can’t handle the heat). One serving of this chili is extremely filling and will leave you super satisfied.

There is also a ton of versatility when making this. You can adjust this recipe to include the veggies and spices that suit you.

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 5 cloves garlic, diced
  • 1 package (approx. 1.5 lbs) ground turkey
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1-2 jalape├▒os, diced
  • 1 28 oz. can diced tomatoes
  • 1 14.5 oz. can fire roasted diced tomatoes
  • 1 can tomato paste
  • 1 can organic kidney beans, rinsed
  • 3 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne powder
  • salt and pepper to taste
  • Tabasco sauce to taste
  • shredded cheese (optional)
  • green onion (optional)
  1. Heat olive oil in large pan over medium heat
  2. Add garlic and onion to the pan and cook until onion begins to turn translucent, stirring constantly
  3. Add ground turkey and break apart with potato masher or wooden spoon and cook until cooked through
  4. Add bell peppers and jalape├▒os and cook until they become slightly tender (approx. 2 minutes)
  5. Add diced tomatoes, tomato paste and kidney beans and stir to combine
  6. Add seasonings, stir to combine and cover pot with lid
  7. Simmer for 1-5 hours (the longer the better), stirring occasionally
  8. Serve as is or add shredded cheese or green onions as toppings
  9. Enjoy!
